The Final Table stars come together with artist and journalist Erica Berger at Otium for an evening filled with discussion on the inherent political nature of food, focusing on the ubiquitous avocado, presented through art and a panel of industry insiders. Start with canapes & a welcome drink on the patio lounge, leading to a four course family-style dinner with optional wine pairings.

Conceived by award-winning journalist Erica Berger, “Avocado Rush: a day in LA” will be the first time competing restaurants have collaborated with an artist in such a way to send a message: eating is more than just eating– it is ultimately a political choice – affecting people, the environment, and human well-being. There’s always a connection between what we eat, the environment, politics, and people. It’s finally time to bring this to light and further the complex but important conversation.
Chef Charles is a French-Colombian professional chef graduated from the ‘Institut Paul Bocuse’ cookery school in Lyon. He trained in classical fine-dining in kitchens in France and Italy, including two years at the three Michelin-starred restaurant “Dal Pescatore”. He has been an educator and artist using food and the meal ritual as medium – collaborating with artists from different fields to create immersive multisensory experiences.
In past years he has given over 30 talks on the future of food and eating, on stages such as The Royal Society with Prof. Brian Cox, The Royal Institution, tech conferences, TEDxHackney and TEDxMogadishu. He currently teaches Culinary Leadership, Sensorial Exploration and Luxury Gastronomy at the Institut Paul Bocuse in the world’s “capital of gastronomy”, Lyon. He is also an educator online through Patreon.
